Ingredients

Essential Ingredients
  • 1 large Brinjal (Baigana) – sliced
  • 1 cup Curd (Dahi) – whisked
  • 1 tbsp Om Gold Rice Bran Oil
  • ½ tsp Mustard Seeds
  • ½ tsp Fenugreek Seeds
  • 2 Dry Red Chilies
  • ½ tsp Turmeric Powder
  • 1 sprig Curry Leaves
  • 1 tbsp Coriander Leaves – chopped
  • Salt – as needed

How to Make
It Perfectly

  1. Heat Om Gold Rice Bran Oil in a pan and fry the brinjal slices until golden brown. Set aside.
  2. In the same oil, add mustard seeds, fenugreek seeds, dry red chilies, and curry leaves. Let them splutter.
  3. Add turmeric powder and sauté for a few seconds.
  4. Turn off the heat and let it cool slightly. Then, mix the tempering into whisked curd.
  5. Add salt as per taste and gently mix in the fried brinjal slices.
  6. Garnish with chopped coriander leaves.
  7. Serve chilled with hot steamed rice.
